Farfalle with Lamb Sausage, Feta and Mint

The lamb sausage imparts a rustic and earthy flavor to this dish that complements the salty sweetness of the feta. The sauce can be made ahead of time and then reheated when ready to eat.

Ingredients

    1 smallyellow onion, chopped
    2 clovesgarlic, chopped
    2 tablespoonsolive oil
    1 poundfresh lamb sausage*, cut into 1-inch pieces
    1 can (28-ounce)chopped tomatoes
    1 can (14-ounce)tomato sauce
    Fine sea salt, to taste
    Ground pepper, to taste
    3/4 pounddried farfalle pasta
    3 tablespoonscrumbled feta cheese
    2 tablespoonschopped fresh mint

Method

In a medium saucepan, sauté onion and garlic in the olive oil.


Add sausage pieces and brown them, breaking up the pieces slightly. 


Add tomatoes and tomato sauce and simmer on very low heat for 1 hour, stirring occasionally. 


Season with salt and pepper.


Cook pasta in boiling salted water according to package directions. 


Drain pasta thoroughly, then toss with half of the sauce. 


Top each portion with additional sauce, crumbled feta and mint.
