Feta and Kalamata Olive Bruschetta

This appetizer is perfect to serve on plates or to pass around at your next party. It goes beautifully with red or sparkling wine.

    Ingredients: 
    • 8 slices peasant or country bread
    • 2 cloves garlic
    • 2 tablespoons extra-virgin olive oil
    • 6 ounces feta cheese, cut into slices
    • 1/2 teaspoon ground black pepper
    • 1/2 cup sliced pitted Kalamata olives
    • 2 tablespoons chopped basil or oregano

    Method: 

    Toast or grill bread, then rub all over with garlic while still hot.

    Drizzle bread on one side with olive oil, then top each piece with a slice of feta, a sprinkling of olives and a bit of pepper. Garnish with basil and serve.
