Fresh Tomato and Basil Dressing

Makes about 1 1/2 cups
Serve this light dressing over a fresh green salad, with a slice of warm garlic bread on the side. Warmed slightly, it can also be paired with grilled fish and vegetables for a quick weeknight dinner. 
Ingredients: 
  • 1 medium tomato, roughly chopped
  • 1/4 cup fresh basil leaves
  • 2 tablespoons champagne vinegar
  • 1/2 cup extra-virgin olive oil
  • 1 clove garlic
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper

Method: 
In a food processor, combine the tomato, basil, vinegar, oil, garlic, salt and pepper. Blend until smooth.
