Grilled Lamb Chops with Cherry Salsa

Sweet cherries make a flavorful salsa to pair with lamb chops rubbed with sea salt and lime zest.

    Ingredients: 
    • 3 cups fresh cherries (3/4 pound), pitted and chopped
    • 2 green onions, thinly sliced
    • 2 tablespoons chopped fresh mint
    • 1 tablespoon minced jalapeño pepper
    • 2 teaspoons lime juice
    • 1/2 teaspoon sea salt, divided
    • 8 bone-in lamb loin chops (about 2 pounds)
    • 1/2 teaspoon freshly grated lime zest

    Method: 

    In a medium bowl, combine cherries, green onions, mint, jalapeño, lime juice and 1/4 teaspoon salt. Stir to combine and set aside.

    Prepare a grill for medium heat grilling. Season lamb chops with remaining 1/4 teaspoon salt and rub with lime zest. Grill chops 5 to 6 minutes per side for medium-rare. Top with salsa and serve.
