Grilled Taleggio Cheese Sandwiches

This mountain cheese, produced for hundreds of years, has an exotic "farmyard" aroma and a unique, soft texture. This sandwich is the perfect accompaniment to a hearty vegetable soup.

  • 6 tablespoons butter, softened
  • 1 tablespoon prepared pesto
  • 8 slices country bread
  • 6 ounces Taleggio cheese, rind removed, at room temperature, divided into 1 1/2-ounce portions
  • 2 tomatoes, thinly sliced

Combine 2 tablespoons of the butter with pesto in a small bowl, then spread mixture onto one side of each slice of bread. Top buttered side of 4 of the slices with cheese and tomatoes, then arrange remaining 4 slices of bread on top, buttered side down, to make sandwiches.

Melt 1 tablespoon of the remaining butter in a large skillet over medium-high heat. Reduce heat to low, then arrange 2 of the sandwiches in the skillet. Cook until golden brown on the first side, 2 to 3 minutes. Flip sandwiches, adding 1 more tablespoon of the butter to skillet when you do. Continue to cook until golden brown on the second side, about 2 minutes more. Repeat process with remaining 2 tablespoons butter and 2 sandwiches. Serve warm.
