Grilled Veggie Burgers with Baked Beans

Serves 4

This recipe makes a complete meal, including tasty veggie burgers with all of the fixings, grilled squash and baked beans.

Ingredients: 
  • 2 large Vidalia onions, cut into wedges
  • 2 large summer squash, thickly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon chopped herbs (such as basil, tarragon, parsley or rosemary)
  • Salt and pepper to taste
  • 1 (15-ounce) can baked beans
  • 1 (-ounce) package classic veggie burgers
  • 4 whole grain hamburger buns
  • Ketchup
  • Yellow mustard
  • Sweet relish
  • Lettuce leaves
  • Sliced tomatoes

Method: 

Prepare grill. Lightly toss onions and squash with olive oil, herbs, salt and pepper in a large bowl, then transfer to the grill and cook until just tender; transfer to a plate. Grill veggie burgers until heated through and buns until just toasted. Meanwhile, heat baked beans in a small pot until heated through. Serve veggie burgers on toasted buns, topped with ketchup, mustard, relish, lettuce and tomatoes. Serve grilled vegetables and baked beans on the side.
