The fruity sweetness of onions lends themselves perfectly to this condiment, excellent on sandwiches and delicious with sharp cheese and roasted pork. Look for an assortment of heirloom onions in your store.
Ingredients: 
  • 2 large heirloom or sweet onions (about 1 pound), thinly sliced
  • 1 cup dry red wine
  • 2 tablespoons honey
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon crushed red chile flakes
  • 1 tablespoon plum or seedless berry preserves
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper

Method: 
In a medium skillet, combine onions and red wine and bring to a boil. Reduce to a simmer, cover and simmer until the onions are soft, about 30 minutes. Uncover skillet and add honey, vinegar and red pepper flakes. Simmer uncovered until most of the liquid has been absorbed, about 45 minutes. Stir in preserves and cook until onion mixture is thick and liquid has become a glaze, 3 to 5 minutes. Taste and adjust seasoning with salt and pepper. Let onion jam cool to room temperature, cover and refrigerate. Bring to room temperature before serving.
