Herbal Mint Tea Salad Dressing

Makes about 1 1/3 cups dressing

Mint tea brings a cool, refreshing flavor to this dressing. Enjoy over salad greens, coleslaw or tomato and feta salad.

  • 1/2 cup sunflower oil
  • 1/2 cup extra virgin olive oil
  • 1/3 cup white wine vinegar or raw apple cider vinegar
  • 1 tablespoon finely chopped shallot
  • 2 teaspoons loose leaf mint tea or 1 opened mint tea bag
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper

Combine all ingredients in a jar with a tight-fitting lid. Shake the jar vigorously to mix all ingredients. If possible, allow the dressing to sit for a day in order to blend the flavors. Taste and adjust seasoning before serving.
