Honduran Ginger Cake

This simple treat is inspired by a popular cake made in Honduras. Fresh ginger gives it a subtle heat and grated yuca is the secret ingredient that adds a chewy texture. Inspired by Whole Planet Foundation® microcredit client recipes.
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup sugar
  • 1 cup canola oil
  • 1 cup grated yuca
  • 4 teaspoons grated fresh ginger

Preheat the oven to 350°F. Line an 8x8-inch baking pan with a long sheet of parchment paper, allowing for 2-inch overhang on each side. 

In a large bowl, whisk together flour and baking powder. In a separate bowl, whisk together sugar, oil, yuca and ginger. Whisk sugar mixture into flour mixture until blended. Spread batter into the prepared pan. Bake about 45 minutes or until golden and a toothpick inserted in center of cake comes out clean. Let cool completely.  

Remove cake from pan and cut into squares.
