Honey Granola Cookies

Makes 2 1/2 to 3 dozen

These honey-sweetened cookies are made with lowfat granola and whole wheat pastry flour. They're a great addition to lunch boxes, or eat them with a tall glass of cold milk for dunking.

  • 1/2 cup (1 stick) butter, softened
  • 2/3 cup honey
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 2/3 cups lowfat granola
  • 1 1/2 cups white or whole wheat pastry flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Preheat oven to 350°F. Cream butter, honey, egg and vanilla together in a large bowl. Stir together granola, flour, baking powder and salt in a second bowl, then add to the bowl with the sugar mixture and mix well. Drop cookie dough by rounded tablespoons onto baking sheets lined with parchment paper. Flatten down slightly with wet fingers or the back of a fork, then bake for 20 minutes. Cool on a rack and serve.
