Honey-Sweetened Buttermilk Pancakes

Makes 10 to12

Remember that nicely browned pancakes are the result of a hot surface and a patient spatula.

  • 1 cup whole wheat flour
  • 1/2 cup unbleached white flour
  • 3 teaspoons baking powder
  • 1 teaspoon sea salt
  • 2 tablespoons honey or sugar, (optional)
  • 3 eggs
  • 2 cups buttermilk
  • 1/4 cup vegetable oil

Sift flour, baking powder, salt, and sugar into a large bowl. Separate eggs, adding buttermilk and oil to the yolks. Mix well. If using honey, add now. Beat egg whites until stiff. Slowly add wet ingredients to dry and mix. Try not to over mix as this will make the pancakes tough. Fold in egg white and let the batter rest for about 10 minutes.

Cooking these on a seasoned griddle or cast iron skillet will dramatically improve your pancake quality.
