  • 1 tablespoon plain yogurt or mayonnaise
  • 4 slices sourdough bread
  • 1/4 pound sliced roast beef
  • 2 tablespoons sliced marinated Peppadew peppers
  • 1/2 cup arugula or baby spinach leaves

Mash cheese and yogurt together in a small bowl until almost smooth then spread mixture onto one side of each slice of bread. Top two of the slices with beef, Peppadew peppers, arugula, salt and pepper, then arrange remaining bread on top to make sandwiches.

Melt butter in a large heavy skillet over medium-high heat. Add sandwiches and cook, flipping once, until golden brown on both sides, 2 to 4 minutes total. Transfer to plates and serve immediately.
