How to Cook: Gluten-Free, Dairy-Free Gravy

This easy gravy has a pure, old-fashioned flavor without using either flour or butter, which makes it a handy recipe for the holidays. For best results, your pan drippings should include about 1 tablespoon fat (the thick, light-colored liquid that rises to the top) and 3 tablespoons juices.
Ingredients: 
  • 1/4 cup dairy-free pan drippings (from roast turkey, beef, chicken, pork or lamb)
  • 2 cups low-sodium turkey broth, divided
  • 3 tablespoons arrowroot starch
  • 1/4 teaspoon fine sea salt, to taste
  • 1/4 teaspoon ground black pepper

Method: 
Put pan drippings in a medium saucepan and place over medium heat. Whisk 1 1/2 cups of the broth into the saucepan and bring just to a boil. Meanwhile, in a small bowl, whisk together arrowroot and remaining 1/2 cup broth. Whisk in arrowroot mixture just until smooth and the mixture begins to thicken, then immediately remove from heat (excess heat will compromise the thickening power of arrowroot). Stir in salt and pepper and serve.
