Italian Sub Pasta Salad with Broccoli

Serves 2 to 3

Any bottled or homemade Italian or vinaigrette dressing works well in this veggie-packed pasta salad. Use fresh mozzarella or pepperoni in place of the provolone and salami, if desired.

  • 1 1/2 cups cooked whole wheat fusilli
  • 1 cup steamed broccoli
  • 1/2 cup halved cherry tomatoes
  • 4 button mushrooms, quartered
  • 3 slices salami, cut into strips
  • 3 slices provolone, cut into strips
  • Italian or vinaigrette dressing

Put fusilli, broccoli, tomatoes, mushrooms, salami, provolone, and dressing into a large bowl and toss gently to combine. Transfer to plates and serve.
