Kermit's Dip

Kermit's Dip

Yields 1 cup
We call this Kermit's Dip because of its bright green color, which comes from the addition of avocado. Serve tortilla chips, cucumber slices or cherry tomatoes along with this creamy dip.
Ingredients: 
  • 1 ripe avocado
  • 1/2 cup plain yogurt
  • 2 teaspoons lemon juice or vinegar
  • 1/2 teaspoon Mexican spices, cumin or oregano
  • 1/2 teaspoon hot sauce

Method: 
Cut avocado in half, remove pit, spoon out pulp from skin and place in a medium bowl. Add yogurt, juice, spice and hot sauce. Mash avocado mixture with a fork or potato masher. Cover with plastic wrap and refrigerate for 1 hour so that flavors meld.
