Lamb Patties with Mint and Rosemary

Serves 4 to 6

While these patties are delicious on their own, dress them up as burgers, if you like, using whole wheat buns, sliced tomatoes and crisp lettuce leaves.

Ingredients: 
  • 1/3 cup chopped yellow onions
  • 1/3 cup panko (Japanese bread crumbs)
  • 3 tablespoons finely chopped mint
  • 2 tablespoons finely chopped rosemary
  • 1 tablespoon finely chopped garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 pound ground lamb

Method: 

In a medium bowl thoroughly combine onions, panko, mint, rosemary, garlic, salt, and pepper. Add lamb and, with your hands, lightly bring all the ingredients together, being careful not to overwork the meat. Form the mixture into 4 patties of even thickness. (These are fairly large patties. Feel free to make 6 smaller patties if desired.) Place on a lined baking sheet, cover loosely with plastic wrap and refrigerate for 30 minutes.

Meanwhile, light the grill or preheat the broiler. Cook patties for 5 to 6 minutes per side, or until just still pink inside. Serve hot.
