Mango Mocktail

Serves 4
Fresh mango purée combined with Italian soda makes for a flavorful drink to enjoy on its own or with hors d’oeuvres. We recommend tangerine soda, but other citrus sodas work wonderfully too.
Ingredients: 
  • 1 small mango , diced (about 1 cup)
  • 1 bottle chilled Italian tangerine soda
  • 4 fresh mint sprigs

Method: 
Place mango in a food processor and process until very smooth, stopping frequently to scrape down the sides of the bowl. Transfer purée to a container. Spoon about 2 tablespoons purée into each of 4 glasses and pour in soda. Stir glasses once or twice and garnish each with a mint sprig.
