Maple and Orange Glazed Carrots

Sweet maple syrup, infused with a hint of orange zest and nutmeg, lightly coats steamed carrots for an utterly delicious side dish.

    Ingredients: 
    • 12 medium to large carrots
    • 2 tablespoons butter
    • 1 tablespoon maple syrup
    • 2 tablespoons freshly squeezed orange juice
    • 1 small orange, grated zest of
    • Sea salt, to taste
    • Freshly ground black or white pepper, to taste

    Method: 

    Peel carrots and then slice into 1/4-inch pieces. Place carrots in vegetable steamer, covered, over boiling water for about 10 minutes, or until tender but not mushy. Remove from heat and set aside. In a large saucepan, melt butter. Add maple syrup, orange juice, orange zest, steamed carrots, salt, pepper and nutmeg. Stir to coat carrots and cook until heated through.
