Maple-Glazed Carrots

Maple-Glazed Carrots

Serves 6

This same glaze is just right on cubes of roasted sweet potato or acorn squash, too.

  • 1 (16-ounce) bag baby carrots (about 3 1/2 cups)
  • 1 tablespoon expeller-pressed canola oil or melted unsalted butter
  • 2 teaspoons pure maple syrup
  • Fine sea salt, to taste
  • Ground black pepper, to taste
  • pinch grated nutmeg and ground cinnamon

Steam carrots over boiling water until just tender, about 5 to 10 minutes. Meanwhile, pour oil or butter and maple syrup into a sauté pan. When carrots are done, drain and sauté them for just a couple of minutes in the oil and maple syrup over medium-high heat.
