Mediterranean Chicken Caesar Salad

  • 3 boneless skinless chicken breast halves
  • 4 tablespoons extra virgin olive oil*
  • 2 tablespoons Mediterranean rotisserie seasoning*
  • 1/2 red or green bell pepper
  • 4 cups washed and torn Romaine lettuce
  • Organic Caesar dressing*
  • 1 cup croutons
  • 1/4 cup grated or shaved Parmesan cheese
  • 2 tablespoons AFA™ Kefalis Organic Kalamata Olives

Four to 12 hours before cooking, marinate chicken breasts with olive oil and seasoning. At mealtime, preheat broiler or grill and cook chicken and bell pepper half 10-15 minutes until chicken is done.

While those are cooking, toss lettuce with dressing and divide onto 4 plates. Top with croutons, Parmesan and olives. Slice cooked chicken and pepper into strips. Arrange on salads and serve.
