Serve atop grilled fish or chicken, or fill pita halves with chickpeas and spoonfuls of this fresh Mediterranean salsa.
Ingredients: 
  • 1 (14.5-ounce) can can diced tomatoes, drained
  • 6 ounces Kalamata olives, pitted and diced
  • 2 green onions, thinly sliced
  • 3 tablespoons chopped fresh basil
  • 1 tablespoon lime juice
  • 1/2 teaspoon dry oregano
  • 1/4 teaspoon ground black pepper
  • 4 ounces feta cheese, crumbled

Method: 
Combine tomato, olive, onion, basil, lime juice, oregano, and pepper; stir well. Gently stir in feta cheese.
