Mini Sausage Breakfast Sandwiches

Serves 4

Easy for kids to assemble themselves, these little sandwiches made with chicken sausage and organic whole wheat pancakes use a bit of fruit spread for a perfectly sweet and savory breakfast. Serve with fresh fruit, and a good day is on its way.

Ingredients: 
  • Olive or canola spray oil
  • 2 Brat Hans® Apple Chicken Sausages, each diagonally cut into 8 slices
  • 32 365 Everyday Value® Organic Whole Wheat Mini Pancakes or Organic Apple Cinnamon Mini Waffles, prepared according to package directions
  • 3 tablespoons grape jelly or apple butter

Method: 

Spray a large skillet with oil and heat over medium heat. Add sausage and cook, stirring occasionally, until hot and browned, 3 to 4 minutes. Arrange a slice of sausage on each of 16 pancakes, top with jelly and remaining pancakes. Serve.
