Mock Caesar Salad

Serves 4 to 6
Classic Caesar salad takes its bold flavor from anchovies, garlic and Parmesan cheese. Our vegetarian version includes garlic as well as capers for a strong savory flavor to satisfy both vegetarian and vegan diets.
  • 1 medium head romaine lettuce, rinsed, dried and torn into bite-size pieces
  • 1 cup vegan croutons (optional)
  • 1/4 cup sliced raw almonds
  • 1 clove chopped garlic
  • 1/2 cup extra-virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice, more to taste
  • 2 teaspoons capers, drained
  • 1/2 cup vegan (egg-free) mayonnaise
  • Sea salt and freshly ground black pepper

For the salad, place lettuce and croutons in a large bowl.

For the dressing, place almonds, garlic and olive oil in a blender and pulverize until mostly smooth. Add lemon juice, capers, mayonnaise, salt and pepper and puree until smooth. If a thinner dressing is desired, add more lemon juice or olive oil.

Toss salad with 1/4 to 1/2 of the dressing. Top with croutons and serve. Leftover dressing can be stored in the refrigerator for up to 2 days.
