Monkfish, Sausage and Apple Stovetop Casserole

Romantic dinner for two or restaurant-style treat for the whole family — either way this high-style, low-country meal is sure to impress.

Ingredients
- 3 (8.0-ounce) fresh monkfish fillets
- 1 (12.0-ounce) package cooked sausage, such as apple gouda
- 1 (16.0-ounce) bag cole slaw mix
- 2 gala apples, sliced
- 2 cups seafood broth
- 1 tablespoon caraway seeds
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
Method
Cut each monkfish fillet into 5 pieces; set aside.
Thinly slice sausage; mix with slaw and apples in large bowl.
Spread into stovetop casserole, Dutch oven or large skillet.
Add broth and cook over medium heat 15 minutes; stir occasionally.
Add fish, sprinkle with caraway seeds, season with salt and pepper; cover and cook additional 8 to 10 minutes, or until fish flakes easily with fork.
