Mozzarella and Tomato Napoleons

The classic combination of tomato and mozzarella is honored with this beautiful presentation. New Jersey Beefsteak tomatoes were the inspiration, but enjoy your local flavors by using any firm, full-flavored tomatoes.

  • 2 large ripe tomatoes in season (beefsteak variety, if available)
  • 1 large ball fresh mozzarella
  • 2 tablespoons basil pesto
  • Extra-virgin olive oil (optional)
  • Balsamic vinegar (optional)
  • Fresh basil leaves (optional)

Stack slices of fresh tomatoes and fresh mozzarella, using a small amount of basil pesto between the layers to help hold it together.

If desired, drizzle with balsamic vinegar and olive oil. Top each stack with a small dollop of pesto or a chiffonade (very tiny strips) of basil leaves.
