Pineapple-Ginger Chutney with Macadamia Nuts

Makes about 3 cups

The tropical flavors of this chutney complement ham beautifully. 

  • 1 pound fresh pineapple, diced
  • 1/2 cup diced red bell pepper
  • 1/2 cup currants
  • 1 small shallot, chopped
  • 2 tablespoons minced fresh ginger root
  • 2 tablespoons brown sugar
  • 1 lemon, Juice of
  • 1 cinnamon stick
  • 1/4 cup honey
  • 2 tablespoons white wine vinegar
  • 1/4 cup chopped macadamia nuts

Combine the pineapple, red pepper, currants, shallot, ginger, brown sugar, lemon juice, cinnamon stick, honey and vinegar in a medium saucepan. Bring to a simmer and cook until the liquid has evaporated and the mixture is thick, about 20 minutes. Remove from the heat and stir in macadamia nuts. Serve warm or cold.
