Pomegranate-Basil Dressing

Makes about 1 cup

Enjoy this dressing with greens or drizzle over grilled chicken or meats, especially lamb.

  • 1/2 cup extra virgin olive oil
  • 1/4 cup unsweetened pomegranate juice
  • 1 tablespoon lemon juice
  • 6 large basil leaves or 1 teaspoon dried basil
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic, crushed
  • 1/4 teaspoon sea salt

Place all ingredients in a blender and process until smooth. Taste and adjust seasoning. Use dressing immediately or cover and store in the refrigerator.
