Quinoa with Oyster Mushrooms and Adzuki Beans

Serves 4 to 6

Look for dried oyster mushrooms in the produce department and make sure to remove their tough stems before using.

  • 1 tablespoon olive oil
  • 1/2 cup thinly sliced carrots
  • 3 green onions, chopped
  • 1/4 cup dried oyster mushrooms, crushed slightly, stems removed
  • 2 cups vegetable stock or water
  • 2 cups cooked adzuki beans, drained and rinsed
  • 1 cup uncooked quinoa, rinsed
  • Salt and pepper to taste

Heat oil in a large skillet over medium high heat. Add carrots, onions, and mushrooms and cook, stirring occasionally, for 3 minutes. Add stock, beans, quinoa, salt and pepper and bring to a boil. Reduce heat to low and simmer for 15 to 20 minutes, or until all liquid is absorbed. Fluff with a fork and serve.
