Raspberry Vinaigrette

Raspberry Vinaigrette

Makes about 1 cup

This tangy vinaigrette is great on all manner of salads. Try drizzling it over baby spinach, candied walnuts or pecans, thinly sliced cucumbers and crumbled goat cheese.

  • 1/2 cup extra virgin olive oil
  • 1/4 cup chopped strawberries
  • 3 tablespoons raspberry vinegar
  • 1 tablespoon yogurt
  • 1/2 teaspoon salt
  • Ground black pepper, to taste

Put all ingredients in a food processor and purée until smooth.
