Roasted Whole Garlic

Makes 6 bulbs

Roasting mellows garlic and gives it a creamy, spreadable consistency. Use as a garnish when serving your turkey or as an appetizer with small butter knives for spreading on bread or toast.

    Ingredients: 
    • 6 firm heads of garlic
    • 3 tablespoons extra-virgin olive oil, or more
    • 1/4 teaspoon coarse salt (optional)

    Method: 

    Preheat oven to 400°F. Cut a slice from the top of each head of garlic; discard. Place garlic in a small baking dish, cut side up. Drizzle with oil and sprinkle with a little salt, if desired. Cover dish with foil and roast until garlic is soft and golden, about 1 hour and 15 minutes.
