Rum Butter Glazed Grilled Peaches

Grilled peaches make a great summertime dessert. Serve with your favorite ice cream, delicate shortbread cookies or slices of angel food cake.
Ingredients: 
  • 4 large ripe peaches, halved and pitted
  • 4 tablespoons (1/2 stick) unsalted butter, melted
  • 1/4 cup packed light brown sugar
  • 1/4 cup white rum or Amaretto
  • 1/2 teaspoon ground cinnamon
  • pinch grated nutmeg
  • 1/4 cup chopped Marcona almonds for garnish

Method: 
Prepare a grill for medium heat cooking. In a medium bowl, combine butter, brown sugar, rum, cinnamon and nutmeg. 

Brush the peaches all over with the butter-sugar mixture. Grill peaches, basting with butter-sugar mixture occasionally, until browned, 3 to 4 minutes per side. Serve at once, spooning any remaining glaze over the grilled peaches. Garnish with almonds.
