Savory Blue Cheese Crackers

Makes 30 crackers

These crackers may be made ahead and frozen. Just pop them into the oven for a few minutes before serving.

  • 1/2 pound double or triple cream blue cheese, such as Saga
  • 1/2 cup (1 stick) unsalted butter, softened, softened
  • 1 tablespoon dry mustard
  • 1/2 teaspoon cayenne
  • 1 cup all-purpose flour
  • 1 1/2 cups whole wheat pastry flour
  • Salt, to taste

Scrape rind off cheese and remove any hard parts. In a bowl, blend butter and cheese until smooth and creamy. Add mustard, cayenne and flour and mix together to form a dough that can be easily shaped. Form dough into two 1 1/2-inch wide rolls. Wrap in waxed paper and chill for at least 2 hours. Preheat the oven to 425°F. Cut each roll of dough into approximately 15 slices and bake on ungreased baking sheets for 12 to 15 minutes. Set aside to let cool, then serve.
