Shrimp and Pineapple Kabobs

Shrimp and Pineapple Kabobs

Serves 3

Serve these sweet and savory kabobs over steamed brown rice. Add a green salad with tomatoes and feta cheese for a perfect summer meal.

  • 1 pound large shrimp, peeled and deveined with tails on
  • 1 (15-ounce) can drained (or 1 cup fresh) pineapple chunks
  • 1 red bell pepper, cut into 1-inch squares
  • 1 yellow or white onion, cut into 1-inch squares
  • 4 (16-inch) bamboo skewers, soaked in water 1/2 hour
  • 1/4 cup balsamic vinaigrette

Oil grill and preheat to medium-high. Alternate shrimp and vegetables onto soaked skewers. Place skewers on hot grill and cook 3 to 5 minutes, turning once and basting often with vinaigrette.
