Shrimp Dip

Shrimp Dip

Serves 24
Serve this creamy dip with thin slices of whole grain bread, crackers and plenty of vegetables for dipping. It's an excellent alternative to classic shrimp cocktail.
Ingredients: 
  • 1/2 pound shrimp
  • 1/2 onion, quartered
  • 1 clove garlic
  • 1 1/2 teaspoon cayenne pepper, divided
  • 8 ounces Neufchâtel cheese, softened
  • 4 ounces sour cream
  • 1 teaspoon Dijon mustard
  • 1 dash hot sauce
  • 1 tablespoon minced garlic
  • 1 teaspoon white pepper
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon fine sea salt
  • 2 tablespoons unsweetened ketchup
  • 1/2 cup chopped green onions

Method: 
Boil shrimp with quartered onion, whole garlic and 1/2 teaspoon cayenne until shrimp is cooked through, about 4 minutes. Peel and devein shrimp. Coarsely chop shrimp and set aside.

Combine quartered onion, whole garlic, remaining 1 teaspoon cayenne, cheese, sour cream, ketchup, minced garlic, salt, white pepper, Worcestershire sauce, mustard and hot sauce in a food processor. Mix well; stir in shrimp and green onions. Allow to chill at least 1 hour before serving.
