Shrimp Dip

Shrimp Dip

Serves 24

Serve this creamy dip with thin slices of whole grain bread, crackers and plenty of vegetables for dipping.

  • 1/2 pound shrimp
  • 1/2 onion, quartered
  • 1 clove garlic
  • 1 1/2 teaspoons cayenne pepper, divided
  • 8 ounces Neufchâtel cheese, softened
  • 4 ounces sour cream
  • 2 tablespoons unsweetened ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon sea salt
  • 1 teaspoon white pepper
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 dash Tabasco sauce
  • 1/2 cup chopped green onions

Boil shrimp with quartered onion, whole garlic and 1/2 teaspoon cayenne until shrimp is cooked through. Peel and devein shrimp. Coarsely chop shrimp and set aside.

Combine quartered onion, whole garlic, reamining 1 teaspoon cayenne, cheese, sour cream, ketchup, minced garlic, salt, white pepper, Worcestershire sauce, mustard and Tabasco sauce in a food processor. Mix well; stir in shrimp and green onions. Allow to chill at least one hour before serving.
