Spiced Baked Apples

At first glance these cinnamon- and nutmeg-infused baked apples make the perfect dessert. But consider eating them for breakfast or brunch, with a spoonful or two of vanilla yogurt.

  • 6 large McIntosh or Jonagold apples
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 6 tablespoons maple syrup
  • 6 tablespoons salted butter, cut into small pieces

Preheat oven the 350°F. Wash and core the apples, leaving them whole. Peel the skin down from the top about an inch. Level the bottoms and arrange in a baking dish. Combine cinnamon, nutmeg and cloves in a small bowl. Fill the cavity of each apple with 1 tablespoon of the maple syrup, 1 tablespoon of the butter and a dash of the spice mixture. Fill the baking dish with 3/4 cup water, then bake, basting often, for 40 to 50 minutes, or until apples are tender.
