Sprouted Grain Orange French Toast with Bananas

Serves 4

A mixture of banana, coconut milk and orange juice makes a sweet and tropical coating for French toast.

Ingredients: 
  • 2 bananas
  • 2/3 cup light coconut milk
  • 1/2 cup orange juice
  • 1/4 teaspoon freshly grated orange zest
  • 1 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons expeller-pressed canola oil, divided
  • 8 slices sprouted 100% whole grain bread

Method: 

Place 1 banana, coconut milk, juice, zest, vanilla and cinnamon in a blender and purée. Pour mixture into a wide shallow dish. Heat 1 tablespoon oil in a large skillet over medium heat. Dip each piece of bread, one by one, into the coconut milk mixture. Drain excess liquid before placing bread on hot skillet. Cook in batches, 2 to 3 minutes or until just browned on the bottom, turn, and brown the other side, 2 to 3 minutes more. Cook remaining French toast in batches with remaining oil. Slice remaining banana and serve on top of toast.
