Beefy burgers stuffed with sautéed onions and bell peppers are ideal for the summer grilling season. Toast the buns on the grill, too, if you like.

  • 1 large yellow onion, finely chopped
  • 1 large green bell pepper, finely chopped
  • 3 pounds lean ground beef
  • 2 eggs, slightly beaten
  • 3 tablespoons Worcestershire sauce
  • 1/2 teaspoon fine sea salt
  • 6 tablespoons ketchup or chile sauce
  • 2 teaspoons finely chopped fresh oregano

Method:
Heat oil in a skillet over medium heat. Add onion and pepper and cook until tender, about 8 minutes. In another bowl, combine beef, eggs, Worcestershire, salt and pepper. Mix lightly and shape into 12 thin patties. Spoon onion and pepper mixture onto centers of 6 patties and top each with 2 tablespoons ketchup or chili sauce and a bit of oregano. Cover with remaining patties and pinch the sides securely closed; place in refrigerator until ready to cook.

Prepare a grill for medium heat cooking. Grill burgers until cooked to your desired doneness, about 5 minutes per side for medium. Top with a slice of cheese when you're just about done; cover the grill to melt the cheese. Serve burger on bun with tomatoes, lettuce and the condiments of your choice.
