Sunshine Kale Salad

Try this nutrient-packed salad with your favorite kale variety: curly, purple or lacinato (a.k.a. dinosaur) are all great choices.

  • 5 cups thinly sliced kale (about 1/2 bunch)
  • 3 cups thinly sliced green cabbage
  • 1 diced yellow or orange bell pepper
  • 1/2 small red onion, diced
  • 1/4 cup sunflower seed butter
  • 5 tablespoons fresh orange juice
  • 2 tablespoons fresh lemon juice

Combine kale, cabbage, bell pepper and onion in a large bowl. In a blender, combine sunflower seed butter, orange juice and lemon juice. Pour dressing over kale and cabbage, and toss to combine. Cover and refrigerate at least 30 minutes and up to 1 day for flavors to combine.
