Sweet and Sour Chicken or Tofu and Vegetables

Serves 4

The popular dish of chicken or tofu and veggies in a sweet and tangy sauce is simple using whole-grain chicken nuggets or pre-baked tofu or try our Easy Baked Tofu. Serve with brown rice.

Ingredients: 
  • 1 tablespoon expeller-pressed canola oil
  • 2 carrots, sliced
  • 1 crown broccoli, cut into small florets (about 4 cups)
  • 1/2 yellow onion, roughly chopped
  • 1 red bell pepper, sliced
  • 3/4 cup frozen pineapple chunks, thawed
  • 12 Nature's Rancher Whole Grain Chicken Nuggets (from 2 packages), prepared
  • OR 1 (8-ounce) package Thai or teriyaki baked tofu, cut into 1-inch cubes
  • 1/3 cup San-J Asian Glaze & Stir-Fry Orange Sauce

Method: 

Heat oil in a wok or large, deep skillet over medium-high heat. Add carrots, broccoli, and onions and cook, stirring often, until crisp-tender, 8 to 10 minutes. Add peppers and cook 2 minutes more. Stir in pineapple, chicken (or tofu) and orange sauce and cook until hot throughout, 2 to 3 minutes.
