A rich, flavored mayonnaise like one can easily double as a sauce for everything from roasted fish fillets to steamed artichokes.
Ingredients: 
  • 1 cup mayonnaise
  • 1 1/2 tablespoon finely chopped fresh tarragon
  • 1/2 small shallot, finely chopped
  • 2 teaspoons lemon juice
  • pinch cayenne pepper
  • pinch fine sea salt

Method: 
In a medium bowl, combine mayonnaise, tarragon, shallot, lemon juice, cayenne and salt, and whisk to combine. Use immediately or cover and refrigerate until ready to serve.
