Tempura Shrimp and Vegetable Stir-Fry

Serve with a bowl of steamed edamame for a finger food that's nutritious and fun.

  • 2 (-ounce) packages frozen tempura shrimp
  • 1 tablespoon extra virgin olive oil
  • 1 (-ounce) package frozen Asian stir-fry vegetables
  • 1/3 cup prepared soy ginger sauce, plus more for dipping
  • Steamed white or brown rice

Prepare shrimp according to package directions. Meanwhile, heat oil in a large skillet or wok. Add vegetables and stir-fry until just tender. Add soy ginger sauce and cook until heated through. Serve shrimp and vegetables over rice, with more soy ginger sauce on the side for dipping.
