Tuna Tabouli

Serves 4 to 6

Stuff pita bread with this delicious salad, or try wrapping it in warm tortillas or spooning it on to rice cakes for a delicious lunch.

    Ingredients: 
    • 1 cup uncooked bulgur wheat
    • 1/4 teaspoon salt
    • 1 cup mint or parsley, finely chopped
    • 1/4 cup extra virgin olive oil
    • 2 tablespoons lemon juice
    • 2 stalks celery, finely chopped
    • 4 green onions, thinly sliced
    • 1 (7 ounce) can Tongol or Albacore Tuna (salted or unsalted)

    Method: 

    Place bulgur wheat in a mixing bowl. Add 1 1/2 cups boiling water and salt, cover and set aside for 30 minutes. Uncover and fluff with a fork. Add mint or parsley, oil, lemon juice, celery, green onions and tuna and toss together. Cover and refrigerate for at least 1 hour, then serve.
