Tuscan Tuna Salad Sandwich

Tuscan Tuna Salad Sandwich

Serves 4

This colorful tuna salad makes a satisfying lunch or dinner served alongside a pile of greens. We love the contrast in textures of the beans, walnuts, tuna and chewy sourdough.

  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1 (6-ounce) can tuna packed in water, drained and flaked
  • 2 tablespoons finely chopped fresh flat-leaf parsley
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1/3 cup chopped walnuts, toasted
  • 1/4 teaspoon fine sea salt
  • Freshly ground black pepper, to taste
  • 1 small sourdough boule, cut into 1/2-inch-thick slices, toasted or grilled and drizzled with olive oil
