Walnut Currant Soda Bread

Makes 1 loaf

Serve this dried currant-studded soda bread spread with soft butter or a bit of cream cheese, if you like.

  • 1 1/2 cups all-purpose flour
  • 1 cup whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup dried currants
  • 1/2 cup walnut pieces
  • 1 cup nonfat yogurt

Preheat oven to 375°F. Put flours, baking soda, salt, currants and walnuts into a large bowl; set aside. Put yogurt and 1/3 cup water into a small bowl and stir to combine. Add yogurt mixture to bowl with flour mixture and stir until a ball of dough forms. Turn dough out onto a lightly floured surface and knead for 1 minute, adding more flour as needed. Transfer dough to an ungreased baking sheet and pat out into a circle. Mark an X on top with the tip of a sharp knife, then bake for 30 to 35 minutes or until done. Set aside to let cool, then slice and serve.
