Winter Watercress, Radicchio and Endive Salad

You may sweeten the dressing with a bit of honey and top the salad with sesame seeds for a nice touch.

    Ingredients: 
    • 2/3 cup extra virgin olive oil
    • 6 tablespoons apple cider vinegar
    • 3 tablespoons finely chopped ginger
    • 1/2 teaspoon roughly chopped garlic
    • 1 teaspoon tamari
    • 6 cups loosely packed watercress, stems removed
    • 4 cups loosely packed bite-size pieces radicchio
    • 2 heads Belgian endive, thinly sliced
    • 1 fennel bulb, trimmed and thinly sliced
    • 1 large green apple, cored and cut into wedges
    • 1/2 cup dried fruit, finely chopped

    Method: 

    Put oil, vinegar, ginger, garlic and tamari into a blender and puree until smooth; transfer to a large bowl. Add watercress, radicchio, endive, fennel, apples and dried fruit and toss gently to combine. Serve immediately.
