Ingredients:
2/3 cup extra virgin olive oil
6 tablespoons apple cider vinegar
3 tablespoons finely chopped ginger
1/2 teaspoon roughly chopped garlic
1 teaspoon tamari
6 cups loosely packed watercress, stems removed
4 cups loosely packed bite-size pieces radicchio
2 heads Belgian endive, thinly sliced
1 fennel bulb, trimmed and thinly sliced
1 large green apple, cored and cut into wedges
1/2 cup dried fruit, finely chopped
Method:
Put oil, vinegar, ginger, garlic and tamari into a blender and puree until smooth; transfer to a large bowl. Add watercress, radicchio, endive, fennel, apples and dried fruit and toss gently to combine. Serve immediately.
