Clams in Green Sauce

Serves 2 to 4
Substitute mussels for clams, if you like, in this Spanish tapas recipe, also known as Almejas en Salsa Verde. Make sure to discard any clams that remain unopened after cooking.
Ingredients
1 dozen small clams
1 to 2 tablespoons extra virgin olive oil
2 cloves garlic, thinly sliced
1/2 cup dry white wine
1/2 cup chopped parsley
Freshly ground black pepper or red pepper flakes
Method
Rinse clams well to remove any sand or dirt. In a medium pan, heat olive oil and sauté garlic until light brown (do not burn). Add white wine and clams. Cover and simmer until clams open, about 5 minutes. Add parsley, stir and season with pepper. Serve immediately.
