Peppery Brunch Potatoes

Ingredients

6 Whole Fields Organic Golden Potatoes, halved
2 tablespoons olive oil
Salt and pepper to taste

Method

Place potatoes in a medium pot. Cover with cold water and add a generous pinch of salt to the water. Cover and bring to a boil over medium-high heat. Reduce heat and simmer 8 to 10 minutes, or until potatoes are fork-tender.

Drain potatoes and place in a bowl. Drizzle with olive oil and season liberally with salt and pepper. Serve immediately or cover with foil to keep warm.
