Roast Beef and Brie Croissant Cocktail Sandwiches

Serves 6 to 10

To serve 12 to 20 people instead, simply substitute a 1-kg wheel of Brie and double the remaining ingredients.

Ingredients

6 croissants, split lengthwise
4 tablespoons aioli or garlic mayonnaise
1 (400-gram) wheel Brie, sliced
1 pound roast beef, sliced thin
Lettuce leaves

Method

Spread croissants lightly with aioli then layer with Brie, roast beef and lettuce. Close sandwiches and cut each into 4 pieces.
