Curried Pork Stew with Potatoes and Green Beans

This is a great make-ahead recipe. Cool completely then freeze in an airtight container. Reheat frozen or thawed stew slowly in a large covered pot over medium-low heat until completely hot. Serve with lime wedges (to brighten the flavor), warm naan bread and fruit chutney or whole cranberry sauce.
-
Savory Honeydew and Almond Gazpacho

For a smoother, more velvety texture, strain this soup through a fine sieve before serving. If you like, make the gazpacho a day or two in advance; just keep it well chilled until ready to serve.
-
Chicken and Wild Rice Soup with Mushrooms

This recipe is a great way to stretch your dollar at the grocery store and satisfy a crowd at the same time. When a cold or flu hits your house, this tasty soup nurses little ones back to healthy with whole grain nutrition, too.

Spring Minestrone

This recipe comes to us courtesy of Heidi Swanson of 101 Cookbooks, a recipe journal. Here's what Heidi says about this recipe, featured on the cover of her book: "I like to serve it over brown rice. It's a great lunch recipe, and you can tweak it in many different ways depending on what you have on hand. Some days I enjoy it with poached eggs on top, other days I’ll add a couple handfuls of edamame and a drizzle of sesame oil. I mention in the book that you might try swapping out the peas for shelled fava beans, and tossing a bit of freshly grated Parmesan lemon zest, and shredded basil on top. It’s an endlessly adaptable, simple soup that is hard to screw up."
