Rustic Italian Cooking: Lamb Stew with Francesca Giarraffa

In this course a complete rustic Italian meal is prepared featuring an entree, side dishes and dessert. The course is led by an instructor born into the Italian cooking tradition, who apprenticed at a specialty restaurant in Naples, Italy. Students will assist in preparing slow cooked lamb stew (simmered in red wine, tomatoes, herbs and spices and served with homemade herbed polenta), arugula salad (with dried fruit and balsamic vinaigrette dressing) and poached pears (in red wine, topped with mascarpone cream and honey), followed by the entire meal enjoyed family style. This class is held in the Cooking and Lifestyles Classroom at Whole Foods Market, 3135 Washtenaw Ave., in Ann Arbor. Students may register on-line through www.wccnet.edu
